Summer & Winter Squash. This famous Italian heirloom is one fantastic all-purpose squash! Harvest young for a very tender, mild and sweet summer squash, or mature fully to a huge, hardy winter squash that can reach up to 4’ long! Either way, the flavour is superb! They are excellent in stir-fries, baked into pies or roasted. Use summer squash as you would a zucchini, or winter squash as you would a pumpkin or butternut. Plants are huge and produce very heavy yields - consider a large trellis or cattle panel. This will also help fruit to grow straight; wacky, curvy shapes will form when plants are allowed to ramble across the ground. They are extremely easy to grow, and plants are disease and pest resistant. Fertilize plants weekly and water regularly. For summer squash, harvest at 18-24” when skin is lime green and striated. For winter squash, harvest at full maturity, when skin hardens and turns beige. Once cured, winter squash will store for up to 6 months.
